Hành trình giới thiệu ẩm thực Việt Nam ra thế giới đã bắt đầu từ lâu, nhưng chưa bao giờ lại quan trọng như hiện nay trong bối cảnh Việt Nam đang hướng tới ghi dấu ấn hình ảnh thương hiệu quốc gia rõ ràng hơn, mạnh mẽ hơn trên trường quốc tế.
Buổi luận bàn có tiêu đề “Định tính và định vị của ẩm thực Việt Nam khi quảng bá với thế giới?” đã diễn ra chiều 14.2.2025 tại TP.HCM là một sáng kiến của nhà ngoại giao Tôn Nữ Thị Ninh, cựu Đại sứ tại Liên minh Châu Âu và Bỉ, nguyên Phó Chủ nhiệm Ủy ban Đối ngoại của Quốc hội, cũng nhà báo, huấn luyện viên về phát ngôn và giao tiếp Khổng Loan và Đặng Soan, CEO của S-World.
Cùng với các khách mời là các lãnh đạo và điều hành các hiệp hội ẩm thực, nhà hàng;, các chuyên gia về ẩm thực;, chủ nhà hàng, đầu bếp, giới truyền thông và thương hiệu đã tìm hiểu sâu sắc hơn về giá trị và bản sắc ẩm thực độc đáo của dân tộc Việt Nam, cách kể với bạn bè quốc tế những câu chuyện đầy cảm hứng về văn hóa ẩm thực và những con người đã tạo nên sự ảnh hưởng trong ẩm thực Việt Nam.
Buổi luận bàn nằm trong chuỗi hoạt động định vị, quảng bá thương hiệu Việt Nam và góp phần vào nỗ lực phát triển hình ảnh, tiếng nói đại diện cho Việt Nam trên thế giới. Tại buổi luận bàn, các chuyên gia đã chia sẻ góc nhìn của mình về ẩm thực Việt Nam, và kế hoạch khám phá, nâng tầm giá trị ẩm thực Việt Nam với thế giới.
Các khách mời cũng thảo luận và xác định nét đặc trưng của ẩm thực Việt Nam, cũng thống nhất về một điểm nổi bật của ẩm thực Việt Nam là sự đa dạng về các món ăn, mùi vị với đặc tính vùng miền sâu sắc. Mỗi món ăn Việt Nam đều ẩn chứa câu chuyện riêng nhiều cảm hứng, hoàn toàn có thể là những nguyên liệu giàu có để kết thành những câu chuyện, điểm thu hút với du khách, đối tác quốc tế đến với Việt Nam.
Ẩm thực Việt Nam nhiều màu sắc, đa dạng mùi, vị và câu chuyện văn hóa đi kèm nhờ lợi thế từ nền văn hoá đa dạng, đa vùng miền, đa dân tộc. Người Việt Nam tự hào bởi món ăn “xanh và lành”, cân bằng mùi vị và hài hòa về dinh dưỡng, nhiều rau xanh, ít chất béo, mỗi món lại có nước chấm riêng biệt theo vùng miền.
Đặc biệt hơn nữa, ẩm thực Việt Nam có độ mở linh hoạt, là sự giao thoa nhuần nhụy giữa ẩm thực phương Đông và phương Tây, tạo nên các món ăn và cách thưởng đặc sắc gắn liền với phong cách sinh hoạt Việt mà thế giới dễ tiếp cận.
Có nhiều ý tưởng để cũng góp phần định vị, quảng bá văn hóa ẩm thực Việt Nam cũng được chia sẻ trong buổi luận bàn.
Ông Lã Quốc Khánh, Phó Chủ tịch Thường trực kiêm Tổng thư ký Hiệp hội Văn hóa Ẩm thực Việt Nam (VCCA), Nguyên Phó Giám đốc Sở Văn hóa Thể thao và Du lịch TP.HCM cho biết Hiệp hội đang nghiên cứu chuẩn bị giới thiệu bách khoa toàn thư 365 món ăn Việt Nam với nước chấm. Còn ông Chử Hồng Minh, Chủ tịch Liên minh Hiệp hội Nhà hàng ASEAN, chia sẻ về tầm nhìn đưa Việt Nam trở thành kinh đô ẩm thực mới của thế giới.
Nhà phê bình phim Lê Hồng Lâm cho rằng ở góc nhìn về văn hóa đại chúng, ẩm thực Việt Nam chưa được thể hiện nhiều trên phim ảnh – vốn là một kênh quảng bá hiệu quả ra thế giới, và hi vọng trong tương lai gần ẩm thực Việt Nam sẽ được giới thiệu hiệu quả hơn thông qua các kênh truyền thông đại chúng với thế giới.
Ông Phạm Minh Toàn, chuyên gia truyền thông cho rằng nên đưa ẩm thực Việt Nam vào một phần của gói trải nghiệm với khách quốc tế khi tới Việt Nam, để tạo nên cảm xúc và trải nghiệm kết nối, từ đó có thể tạo ra những câu chuyện và ấn tượng sâu sắc hơn.
Nhà ngoại giao Tôn Nữ Thị Ninh cho rằng, ẩm thực là một chiều kích của văn hóa và lối sống Việt Nam, là một trụ cột trong câu chuyện thương hiệu quốc gia và cần tìm ra những đặc trưng. Chuỗi luận bàn mở đầu sẽ còn được tiếp tục với các chương trình tiếp theo để nhằm quảng bá hiệu quả “câu chuyện Việt Nam với thế giới.
